Galloways have a dense coat of hair (second only to bison!) with a downy undercoat that insulates them well from the cold. As a result, they do not put on excessive fat and can finish well on grass alone. Their meat is praised for its flavour, juiciness and tenderness.
Canadiennes are a breed developed in Canada from some of the first cattle brought to the nation in the 1600s. They are well adapted to the harsh Canadian climate.
Dexters, a smaller breed, are triple-purpose: suitable for meat, milk, and draft power. They make efficient use of their feed and also produce tender meat with excellent flavour.
